What Is Geisha Coffee?
Geisha (Gesha) is a rare variety of Arabica coffee celebrated for its elegant, floral aromatics and tea-like clarity. Known as one of the most sought-after coffees in the world, it commands premium prices due to its distinctive cup profile, low yields, and the careful cultivation it requires.
Originally collected from the Gesha region of Ethiopia and later introduced to Central America in the 1950s, Geisha rose to global prominence after its remarkable success at the Best of Panama auctions. Today, this exceptional variety is cultivated in select origins worldwide, including Nicaragua.
Anaerobic Process
At La Bastilla, anaerobic fermentation is carried out in temperature-controlled stainless steel tanks. During this oxygen-free fermentation, naturally occurring microorganisms metabolize sugars in the coffee cherry, producing organic acids—such as lactic acid—that enhance complexity and intensify aromatics.
Careful monitoring of temperature, pH, and mucilage development ensures precision and consistency throughout the process. The result is a vibrant, layered cup profile that highlights both the unique character of Geisha and the innovation behind anaerobic processing.
